Wild Game Cooking Series With Marcus Paslay

January 13 @ 12:00 pm - 3:00 pm

Join us for our next culinary experience in our Defender Wild Game Cooking Series. In this educational cooking and tasting event, you will learn firsthand from local Fort Worth Executive Chef and Owner Marcus Paslay how to prepare wild game recipes.

Chef Paslay opened Clay Pigeon Food & Drink in 2013 to much success and has since been featured in local and national media, including: Food & Wine; USA Today; CBS This Morning Saturday; Men’s Journal; Men’s Health; Good Day Fox 4; Fort Worth Star-Telegram; Texas Monthly; Fort Worth, Texas Magazine; D Magazine; and The Dallas Morning News, to name a few. Zagat named him one of 16 chefs redefining Texas cuisine.

In January 2017, Paslay opened his second restaurant, Piattello Italian Kitchen, in Fort Worth’s new Waterside development. As a nod to Paslay’s first restaurant, Piattello, meaning “plate” in Italian, also refers to the term “clay pigeon.”

Your evening includes appetizers, expert wine pairings by Central Market sommelier JR Clark, and a generous tasting of the dishes prepared. Due to the nature of this event, seating is limited. Don’t miss this exclusive opportunity to learn up close and personal with one of the most expert chefs in DFW how to prepare game in a unique and delicious way!

Recipes include:

Venison Tartare
Grilled Venison Loin
Venison Osso Bucco
